There's something special about a cake that comes together in just 20 minutes and still tastes like a hug from the oven. This simple berry cake is one of our go-to recipes when we want something sweet, comforting, and made with love—but without spending hours in the kitchen.

It's soft, fruity, and just sweet enough. Best of all? You can use whatever berries you have on hand—fresh or frozen. Whether it's a spontaneous weekend treat or a quick dessert for unexpected guests, this cake never disappoints.

🍓 What You'll Need

  • 130 g all-purpose flour

  • 100 g granulated sugar

  • 1 packet baking powder

  • 1 egg

  • 60 ml vegetable oil (we like to use melted butter for extra flavor)

  • 120 ml milk

  • A pinch of salt

  • 3–4 handfuls of mixed berries (raspberries, blackberries, strawberries, red currants—anything goes!)

  • Butter and coarse flour (or breadcrumbs) for greasing the pan

  • Powdered sugar for dusting

👩‍🍳 How to Make It

  1. Preheat your oven to 180°C 

  2. Grease a 20 cm (8-inch) round baking pan with butter and dust it lightly with flour or breadcrumbs.

  3. In a large bowl, whisk together the flour, sugar, baking powder, egg, oil (or butter), milk, and salt until you get a smooth, lump-free batter.

  4. Scatter the berries over the bottom of the prepared pan.

  5. Pour the batter over the fruit and gently smooth the top.

  6. Bake for 40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

  7. Let it cool slightly, then dust with powdered sugar and serve warm or at room temperature.
